Republique Cabernet Sauvignon is proof of what savvy Cab fans have discovered: Seated along California's Central Coast, Paso Robles boasts a long growing season of immense day-to-night temperature swings that yield ideally ripened grapes and deliciously dynamic flavor profiles. It comes to us courtesy of veteran winemaker Clay Brock, who uses grapes from top vineyards across the region's rolling hills. In the glass, it's deeply colored and immediately enticing, wafting heady aromas of black currant, plum and toasted tobacco leaf with hints of toasty spice imparted from oak aging. Its palate showcases Paso's trademark intensity, with dark fruit flavors, fresh acidity and velvety tannins that leave an all-over round impression. Already drinking well, it will gain further complexity with a few years in the cellar. (If you can wait that long.) Tasting Notes: This is a full-bodied red wine with black currant, plum and cigar box aromas. On the palate, black plum and berry flavors are nuanced by Moroccan spices, all framed by soft tannins.
